Cool Strawberry Pie Perfect Treat for Hot Summer Days

Try something fun, fresh and summery. Try something new. This is a bake-less pie recipe just for you.

Baking in the summer can seem outrageous, but with a quick and fresh recipe like this strawberry pie from allrecipes.com, pie making can be as easy as one-two-three.

Sweet summer fruit is the magic of the season. Baking or cooking is one of the best ways to bring out the flavors of perfectly ripened fruit. However, we have a cheat-sheet recipe that does the trick, sans all the mess and heat.

In fact, this cooled-down strawberry pie will help you beat the heat. With a no-bake recipe, you have summer desserts covered.

Give a pie a try. Here’s what you’ll need.

1 quart of fresh strawberries, trimmed

Ingredients From the Cabinet or Local Grocery Store: 

1 pre-made pie crust, baked
1 cup of white sugar
3 tablespoons corn starch
2/4 cup water
1 can heavy whipped cream

Directions:

  1. Place half of your trimmed and washed strawberries in the pre-baked pastry shell. In a separate container, add the rest of your strawberries together with the sugar and mash. Let the mixture macerate, or combine. Place mixture in a small saucepan over low heat and bring to a boil. Monitor by stirring constantly.
  2. Whisk together cornstarch and water. Stir this mixture into the boiling strawberries. Reduce heat to a simmer for about 10 minutes, or until thickened. Pour over berries in pie shell and chill for two hours in the refrigerator.
  3. Slice and serve pie with a dollop of whipped cream on top.
